k’s daycare wanted to celebrate International Sandwich Day which is on Monday, November 3rd this year. i haven’t introduced k to bread yet since it’s mostly made with wheat flour and egg – both of which are no-no’s in k’s diet.
before i considered looking for a recipe to make bread nor do i own a bread baking machine — although a friend got one for her wedding years ago and i did think they were really cool – i went shopping at my local natural foods store. luckily i was able to find Ener-G Foods’ Brown Rice Loaf. i like that it was free of gluten, wheat, casein, dairy, egg, soy, nut, low/no sodium. in addition it was non GMO Project Verified.
the bread is a bit drier and delicate than breads with gluten – it can crumble if you don’t handle it gently. after you toast it, it tastes better. k ate it for her class project and hasn’t had any allergic reactions to it. i’m glad to have found bread that k can eat … sandwiches, here we come!
