the first time i made pumpkin pie, i didn’t know if i could eat pumpkin pie again – knowing the ingredients and amount made me realize why pumpkin pie is so delicious. while i wanted k to experience a delicious dessert, i wasn’t ready for her to take in all the sugar and fat. so i searched online and found a recipe for the filling and a recipe for pie crust that sounded healthier and had very few ingredients given the limited foods that k has tried so far.
i was excited to try this recipe to see how it would taste – not just for k but for myself! it just sounded so good and it didn’t disappoint. the mixture of apple, banana and pumpkin for the filling was a winner!
