one of little one’s favorite holiday songs is Rudolph the Red-Nosed Reindeer. last year we introduced the movie but she got scared of the abominable snowman so she didn’t finish the movie. this year, she was able to watch and enjoy the entire movie!
little one had a sick day this week so with the extra time, i created a red-nosed friend for breakfast.
- alphabet cutters, optional
- Bob’s Red Mill Gluten Free Pancake Mix
- 1 Tbsp ground flaxmeal + 3 Tbsp water
- 1 Tbsp oil
- 1 cup skim milk
- non fat yogurt
- blueberries (2)
- organic red apple
make pancake according to package. you will need to create a small round pancake, an oval pancake and extra pancake of any size to cut into strips. set aside to cool.
slice a small circular piece of apple with the red peel the shape of a nose that will fit the oval pancake. also slice an oval shaped apple equal or slightly smaller than the oval pancake. also create 2 small circles/ovals for eyes.
when the pancake cooled, cut the extra pancake into thin strips: 2 long strips and 8 small strips for the reindeer’s antlers.
put the oval apple slice and the round pancake slice on the plate. create antlers on the top left and right of the oval apple.
place the oval pancake on top of the oval apple slice. create Rudy’s face by adding the apple nose on the bottom part of the oval pancake. then place the small apple eyes on the top part of the circle and finish it off with blueberries on top of the apple for Rudy’s eyeballs.
if you so feel inclined, use alphabet cutters to create the word “Rudolph” out of remaining apple slices.
