when i made the brussels sprouts christmas tree and showed it to little one, i mentioned that i’ve seen people decorate food christmas trees out of other green vegetables, like broccoli, but i chose brussels sprouts because she likes it. little one said, “maybe we can use kiwi” and i responded, “that’s a great idea – let’s do it tomorrow!”

ingredients
tree
- 3 kiwi
tree trunk
decorations
- mango
- pomegranate
- organic blueberries
- other fruits as desired, cut into different ornament sizes
preparation
peel kiwi and slice horizontal into equal 1/4″ thick pieces. set on fruit plate.
add pomegranate, blueberries and any other fruits you want to use as decorations.
cut a 1/4″ thick mango and cut out a star. put on the top of the platter.
for the tree
add 2 slices of kiwi below the mango star. cut diagonally in half: left kiwi cut diagonally to the right; then right kiwi, cut diagonally to the left for the top layer of the tree.
add 3 slices of kiwi as the second layer of the tree. cut diagonally in half: left kiwi, cut diagonally to the right; then the right kiwi, cut diagonally to the left. leave the middle kiwi untouched.
continue adding 4 slices for the third layer of the tree and 5 slices for the fourth layer, if desired. follow same steps to cut the outer left kiwi slice diagonally to the right, cut the right kiwi slice diagonally to the left and leave the center slices untouched. if you feel there is too many gaps, add any of the leftover kiwi slices in the spaces.
decorate the tree
sprinkle or position the pomegranate, blueberry and any other fruit on top of the kiwi to decorate the tree.
complete
add 2 chocolate covered pretzels centered below the last layer of kiwi, representing the tree trunk.
admire, serve and enjoy!
