my little one has had an abundance of wonderful hand-me-down clothes, books and toys. one of baby’s favorite toys been the musical tea-for-two set. the tea pot sings a few melodic songs and makes a sound when you pour. it’s quite cute! so this morning’s breakfast is dedicated to tea for two or three or four … with a little cake of course!

yesterday was the annual Star Wars Reads Day. in a local event, this year’s event focused on the retelling of the original trilogy. authors Alexandra Bracken, Adam Gidwiz and Tom Angleberger talked about the books they wrote and then allowed the audience to play Star Wars trivia as well as get quizzed by the fans! so this morning’s breakfast was dedicated to them!

processed gluten free eggless snack: buckwheat crackers

at Le Pain Quotidien, m got prosciutto, fig and pear tartine with ricotta, honey and wild arugula. usually we have a choice of bread. since we wanted to keep our hands free of allergens when we’re with k, the waiter offered us the option of gluten free vegan crackers.

recipe: garlic free pesto

pine nuts is the only tree nut that k is able to eat (according to the last allergy test) so i decided to make pesto! basic pesto recipe includes garlic and cheese but i decided to go even bare bones with just pine nuts, basil and oil.

my first dish for k with pesto was with pasta. k ate it all up!

recipe: cream cheese frosting

i was thinking of making cheesecake for Father’s Day since I knew k could eat cream cheese but i didn’t find a recipe i could be sure of yet and i didn’t have time to experiment with any recipes. but i found a great alternative! i had made gluten free vegan chocolate cake but had not come up with a topping yet. so how about cream cheese frosting?

i found a few recipes i was interested in trying but this one was great because it was a no-cook recipe and had lots of flavor option ideas! i used whipped cream cheese so it may have made the consistency softer and i wasn’t able to pipe a swirly top above the cupcake. but it tasted good with the chocolate cake. i’ll be sure to try it again as well as try the other flavors.

daycare cooking assignment: gluten free eggless brown sugar cookies

it’s sugar cookie day again at k’s daycare so why not try another recipe? this is called a chewy butter cookie but it’s very similar to the ingredients of other sugar cookies i’ve tried so i decided to give it a shot. the recipe called for a lot of sugar – both white and brown so i reduced the sugar and only went with brown.

the cookies were the perfect level sweet (yikes – imagine if i put in the original amount!) and not too chewy (which is good for a cookie). i think this will be my go-to sugar cookie recipe from now on!

processed gluten free eggless snack: Chickpea Chips

the first food that k showed me lack of interest in was chickpeas – feeding them to me instead of eating it. so when i found these chips in the supermarket, it seemed like a fun way for k to retry chickpeas. i know k can eat chickpeas without an allergic reaction. there are also a few new spices to introduce k to so i picked it up.

baby feeding schedule: beginning of a picky eater?

friends have told me how their kids used to be a good eater but then the kid later became a picky eater. i was always afraid that would come true because we’ve been lucky that k has been a really good eater. then last month, k started to say: “no peas” “no pepper” “no corn” consistently. every now and then she’ll say: “no tofu” “no  blackberries” – which she normally loves. other times, she’ll be selective and say: “only bok choy”, “only fish” or “only pasta”. if we say “no”, she’d tantrum. what happened my happy eater? the last meal of everyday is oatmeal. it’s a comforting, healthy and k seems to love it. it’s also great because i can make a big batch and make it easy to prep at night. i usually put just a little fruit in it to give it a little variety every day. one day i ran out of fruit so i threw in some lentil. k loved it and kept asking for it. so, it became a new routine: oatmeal and lentil every night.
