while June 14 is Flag Day, but the day you see flags everywhere is on Independence Day aka Fourth of July! so for breakfast, how about some stars and stripes with yogurt, fruit and waffles!
well, maybe only 5 colors of the rainbow but even so, it was fruity and colorful way to start the morning or a healthy dessert treat any time of the day!
to continue with the theme of planes, how about some Star Wars art for a dad with loves the X-Wing Fighter? then to give the hint of the Father’s Day gift two different sized waffle shirts? finally, what’s Father’s Day without hearts? all on a Sunday morning.
unless you’re using oatmeal to bake, most of the time oatmeal looks like porridge. even if you add something sweet (i.e. fruit and honey) or savory (i.e. crab or veggies), it still looks soupy yet comforting, of course. but that doesn’t mean you can’t dress it up a little!
at daycare, k’s class had a visitor: a pilot! so for this week’s waffle art, i made airplanes. not my finest work but k recognized it!
since we were going to take k out to a baseball game, i thought i’d make it a fun baseball themed Sunday breakfast. with just a little fruit, some yogurt and toasted waffles, we have baseball art!
k enjoyed the roast variations of squash, sweet potato/yams and apple and cinnamon squash and beets so i thought i’d continue the variations of the vegetables and introduce new spices along the way. this time i’m trying rosemary.
i have missed a few Sunday breakfasts. i am not a morning person! m takes care of k in the morning, from wake up through breakfast while i catch an extra hour or so of ZZZZZZZZs. i had tried to be original every Sunday, coming up with something new (i.e. muffins, pancakes, crepes, etc.) but i realize it would take a lot more planning and time than i am capable of! k’s cooking class is making chocolate muffins again. honestly i haven’t made any chocolate muffins since then but i did know if i did, i would try a different recipe. so here’s my opportunity of a do-over. i chose this recipe because it doesn’t have sugar as an ingredient, instead it uses fruits: dates and banana. i didn’t have any dates and i think they are a bit too sweet, so i added apples instead. the recipe also used “nutty” ingredients, i.e. almond milk and peanut butter. k is allergic to nuts so i used cow milk and butter. finally i found a baking flour that claims it can be substituted for any baking flour, so i used it instead of wheat flour. the last meal of everyday is oatmeal. it’s a comforting, healthy and k seems to love it. it’s also great because i can make a big batch and make it easy to prep at night. i usually put just a little fruit in it to give it a little variety every day. one day i ran out of fruit so i threw in some lentil. k loved it and kept asking for it. so, it became a new routine: oatmeal and lentil every night. when i watched a gf make crêpes for brunch a few months ago, she showed me how simple it was. so when i saw a picture of these cinnamon apple crepes online, i decided to give it try it for our Sunday breakfast. the recipe i found required gluten free and gum free pancake mix or flour, which i didn’t have but i tried the recipe anyway.
well, let’s just say i ended up with big, thin pancakes – but they were tasty with the cinnamon apple filling so it’s all good. when i have the right flour, i’ll try it again to see if i come up with thin quality crepes. if not, they were a fun variation to Sunday morning pancakes! after enjoying the happy pancakes with k, i was excited to try other alternatives. i found this biscuit battered fruit rings recipe *see note 2 because it sounded fun! apple wrapped in pancake – how awesome is that? the process looked like it would be fun to watch so i had k join me in the kitchen while i dipped the apple into the pancake batter and then cook – she enjoyed seeing the process and more importantly she had a great time eating them! next country k’s daycare is “visiting”/exploring is Australia. apparently one of the famous breakfasts are english muffins with bananas on top. so i have to figure out how to get/make gluten free vegan english muffins. when i went hunting for it in various grocery stores, i couldn’t find any so i took online to find a recipe to make it myself. i saw this online and thought they were too cute to resist! since k is allergic to strawberries per the original recipe, i used raspberries instead. also the original recipe had a marshmallow on top but to keep it completely fruit, i added another piece of banana on top. with the remaining fruit, i made a simple fruit salad with all the fruits k can eat so we all enjoyed a cute and refreshing dessert.
even though k has not read / heard the book yet, she loved how the grinch kebabs looked and wanted more!

for the holidays k’s school is making sugar cookies. so i found this sugar cookie recipe and pared it down for k’s allergies – which made it just 2 main ingredients and a few flavoring ingredients (vanilla and salt). the only cookie cutters we owned were star wars cutters that m got as a gift. so for the trial run, i made star wars apple “sugar” cookies.
m enjoyed the star wars cookies but i didn’t love the first recipe so i looked for another. this one had a few other ingredients, including egg, butter and milk. since k can’t eat eggs, i substituted it flax meal with water. i also used a vegan spread instead of butter. m liked the flavor of this milk “sugar” cookie better than the first. as for our first family Thanksgiving meal, we sat around the table together, used same plates and served everyone – including k – at the same time. other being than being anxious to eat, as k usually is, i don’t know if she really noticed the difference in how we were eating but it was a nice feeling though nostalgic since it another indicator that she’s becoming a big girl. as usual the end of the meal resulted in an empty plate to our very happy eater despite her food allergies and for that we are always thankful! menu for Thanksgiving meal … Continue reading thanksgiving meal 2014 deux: family
since i enjoyed the filling in the apple banana pumpkin pie i made for k’s school, i searched for another recipe that had all three fruits and came across this bread recipe. i pared down a lot of the ingredients to simplify it and adjust it for k’s allergies / foods k hasn’t tried yet. –> recipe on Palatable Palette it came out great. no extra sugar added either – the fruits provided all of the natural sweetness. before our family Thanksgiving, k was going to have a Thanksgiving meal with her classmates in daycare! each toddler’s family was asked to bring a dish and they would sit and share a meal together! unfortunately with k’s allergies, she won’t be able to have what her classmates bring in so i wanted to make sure she had a little of everything as well as had some to share.

the first time i made pumpkin pie, i didn’t know if i could eat pumpkin pie again – knowing the ingredients and amount made me realize why pumpkin pie is so delicious. while i wanted k to experience a delicious dessert, i wasn’t ready for her to take in all the sugar and fat. so i searched online and found a recipe for the filling and a recipe for pie crust that sounded healthier and had very few ingredients given the limited foods that k has tried so far. –> recipe on Palatable Palette i was excited to try this recipe to see … Continue reading apple banana pumpkin pie
the results of k’s second food allergy test, shows that her food allergies will continue to be a concern. our allergist had suggested that we would clear our house of things that she’s allergic to in hopes that her reaction to them will lessen and then perhaps she will grow out of the allergy.
i do enjoy prepping k’s food so that part is not a burden. other families with children k’s age have been able to share meals with their toddlers and i was looking forward to making meals that we could all eat together but it seems like making separate meals will be a longer term process to make sure her meals aren’t contaminated with anything she is / could be allergic to.
