just like i can eat a variation of bread, when i went to pick up the Ener-G brown rice toast I introduced k to back in November for International Sandwich Day, i found the same brand has a Tapioca Loaf.
every morning k has plain organic whole fat yogurt with banana for breakfast – sometimes with additional fruit, i.e. avocado, mango, pineapple, etc. but when i looked at the packaging of yogurt i bought one Sunday morning, i realized i bought flavored yogurt instead of the plain. the problem with flavored yogurt is that in addition to added flavor, there is a LOT of sugar. k’s daycare cooking class was going to have waffles so i had to either find or make waffles that k could eat in class. easiest would be to find one that was gluten free vegan and with concerns of k’s allergies, they also had to be made of ingredients that k has already been introduced to.
luckily there was one in our local store that we could try: Van’s gluten free flax waffles. it has no artificial flavors, colors or preservatives. it is sweetened with fruit juices instead of high fructose corn syrup. in addition, it is gluten free, egg free and non GMO Project verified. at k’s daycare, she is the same age as a few other toddlers in the class and the teachers decided since they all started walking, to have them begin potty training. with potty training, they will give them a treat. i have read some give candy but at school they plan to give Cheerios. since Cheerios has wheat and eggs, i needed to find a gluten free vegan alternative.
k’s daycare wanted to celebrate International Sandwich Day which is on Monday, November 3rd this year. i haven’t introduced k to bread yet since it’s mostly made with wheat flour and egg – both of which are no-no’s in k’s diet.
before i considered looking for a recipe to make bread nor do i own a bread baking machine — although a friend got one for her wedding years ago and i did think they were really cool – i went shopping at my local natural foods store. luckily i was able to find Ener-G Foods’ Brown Rice Loaf. i like that it was free of gluten, wheat, casein, dairy, egg, soy, nut, low/no sodium. in addition it was non GMO Project Verified.
