my little one has had an abundance of wonderful hand-me-down clothes, books and toys. one of baby’s favorite toys been the musical tea-for-two set. the tea pot sings a few melodic songs and makes a sound when you pour. it’s quite cute! so this morning’s breakfast is dedicated to tea for two or three or four … with a little cake of course!

yesterday was the annual Star Wars Reads Day. in a local event, this year’s event focused on the retelling of the original trilogy. authors Alexandra Bracken, Adam Gidwiz and Tom Angleberger talked about the books they wrote and then allowed the audience to play Star Wars trivia as well as get quizzed by the fans! so this morning’s breakfast was dedicated to them!

processed gluten free eggless snack: buckwheat crackers

at Le Pain Quotidien, m got prosciutto, fig and pear tartine with ricotta, honey and wild arugula. usually we have a choice of bread. since we wanted to keep our hands free of allergens when we’re with k, the waiter offered us the option of gluten free vegan crackers.

daycare cooking assignment: gluten free eggless brown sugar cookies

it’s sugar cookie day again at k’s daycare so why not try another recipe? this is called a chewy butter cookie but it’s very similar to the ingredients of other sugar cookies i’ve tried so i decided to give it a shot. the recipe called for a lot of sugar – both white and brown so i reduced the sugar and only went with brown.

the cookies were the perfect level sweet (yikes – imagine if i put in the original amount!) and not too chewy (which is good for a cookie). i think this will be my go-to sugar cookie recipe from now on!

processed gluten free vegan pasta: Trader Joe’s Organic Brown Rice and Quinoa Pasta

Trader Joe's Organic Brown Rice and Quinoa Pastafor an alternative to only brown rice pasta, i found a variety from Trader Joe’s that included quinoa. it’s also gluten free and vegan so k can eat it.

recipe: corned beef with cabbage

to celebrate St. Patrick’s Day, i thought i would try a traditional dish that is easy to make and flavorful: corned beef with cabbage. Trader Joe’s makes it especially easy to make this meal! they sell Uncured Sliced Corned Beef that is minimally processed and Shredded White Cabbage. it is perfect for the little one – with the corned beef already thinly sliced and the cabbage shredded, i needed to do little but boil everything.. from the same brand that brought k her love of waffles, is Van’s Gluten Free Multigrain Crackers. it has a crispy texture and nice flavor. like most snacks it is a little saltier than i would like for myself and even more so to give to a toddler so i lightly wipe off the top and bottom of each cracker to remove some of the salt and then it’s perfect!
