my go-to for savory or sweet gluten free baking mixes is Bob’s Red Mill but i like to try others. It’s Wholesome has an extensive line of sweet baking mixes so for the week before Valentine’s Day, little one and i made brownies! little one mixed the batter and spread it on the pan so we could bake a thin layer of brownies. after letting it cool, we used the cookie cutters to create heart-shaped brownies. little one and i had fun baking and eating brownies! i love french apple tarts but phyllo dough has wheat so i can’t share it my little one. i was browsing online and found an alternative – apples with graham cookie crust. bingo!

pumpkin bread is one of my favorite baked goods and i wanted a recipe that my little one could enjoy as well. i found this vegan pumpkin muffin recipe and tweaked it with my child’s allergy restrictions. the original recipe was sweeter than i liked so i reduced the sugar and i added some pumpkin seeds to give the muffins a little crunchy texture. since my little one was helping to make dessert, i wanted to find something simple and fun. this no bake pumpkin cheese cupcakes fit the bill. my little one enjoyed mixing and smashing and filling. after dinner was done, everyone enjoyed eating them!
- muffin pan
- 1 small ziplock bag
- meat tenderizer -or- potato masher
- icing spatula -or- butter knife
well, maybe only 5 colors of the rainbow but even so, it was fruity and colorful way to start the morning or a healthy dessert treat any time of the day!
- 4oz organic yogurt
- red fruit: raspberries, strawberries
- orange fruit: papaya, orange, butternut squash, pumpkin
- yellow fruit: pineapple, mango
- green fruit: avocado, kiwi, grapes
- blue/purple fruit: blueberries, blackberries
