processed gluten free vegan snack: Hi I’m Skinny Quinoa Sticks

more dry snacks for k! i guess you can say once i started looking for them, there’re not that hard to find. so far i’ve only been focused on savory ones and k doesn’t seem to mind. my latest shopping endeavor led me to these quinoa sticks with chia seeds.

daycare cooking assignment – China Study: eggless Yang Zhou fried rice tower

the next country on k’s daycare schedule is China. the teacher asked for my help. years ago i taught elementary grade kids to make dumplings and i thought of simpler steps for k’s class of toddlers to make them but my greatest challenge was k’s wheat allergy. i tried for several weeks to make gluten free dumping wrappers to no avail. they kept falling apart – too fragile for toddler hands.

processed gluten free vegan snack: Van’s Multigrain Crackers

from the same brand that brought k her love of waffles, is Van’s Gluten Free Multigrain Crackers. it has a crispy texture and nice flavor. like most snacks it is a little saltier than i would like for myself and even more so to give to a toddler so i lightly wipe off the top and bottom of each cracker to remove some of the salt and then it’s perfect!

baby feeding schedule: eating together

my goal the past month has been to try to make meals that we can all eat – whether together or not – with leftovers so that it can last a few meals. bi-weekly i’ll make a fish and vegetable fried rice that will last k 2 to 3 meals. monthly i’ll make a batch of garlic free tomato sauce for pasta, pizza or lasagna. i definitely spend less time in the kitchen daily. recipe: gluten free vegan cinnamon apple crêpes

when i watched a gf make crêpes for brunch a few months ago, she showed me how simple it was. so when i saw a picture of these cinnamon apple crepes online, i decided to give it try it for our Sunday breakfast. the recipe i found required gluten free and gum free pancake mix or flour, which i didn’t have but i tried the recipe anyway.

well, let’s just say i ended up with big, thin pancakes – but they were tasty with the cinnamon apple filling so it’s all good. when i have the right flour, i’ll try it again to see if i come up with thin quality crepes. if not, they were a fun variation to Sunday morning pancakes! recipe: happy apple-in-the-middle pancakes

after enjoying the happy pancakes with k, i was excited to try other alternatives. i found this biscuit battered fruit rings recipe *see note 2 because it sounded fun! apple wrapped in pancake – how awesome is that? the process looked like it would be fun to watch so i had k join me in the kitchen while i dipped the apple into the pancake batter and then cook – she enjoyed seeing the process and more importantly she had a great time eating them! baby feeding schedule: cooking instead of prepping food

for the past year, it feels more like i’ve been “prepping” food for k instead of actually cooking. i guess  i’m thinking in terms of not just letting food speak for itself but actually flavoring food.

daycare cooking assignment: sugar cookie

for the holidays k’s school is making sugar cookies. so i found this sugar cookie recipe and pared it down for k’s allergies – which made it just 2 main ingredients and a few flavoring ingredients (vanilla and salt). the only cookie cutters we owned were star wars cutters that m got as a gift. so for the trial run, i made  star wars apple “sugar” cookies.

milk sugar cookiem enjoyed the star wars cookies but i didn’t love the first recipe so i looked for another. this one had a few other ingredients, including egg, butter and milk. since k can’t eat eggs, i substituted it flax meal with water. i also used a vegan spread instead of butter. m liked the flavor of this milk “sugar” cookie better than the first.  Continue reading “daycare cooking assignment: sugar cookie”

processed gluten free vegan snack: KA•ME rice crackers

since little one can eat rice, i look at all the dry snacks that say “rice” since wheat is not an option. these crackers are called rice crackers so it was promising. they tasted like the japanese sembei crackers my parents used to buy when i was a kid. personally, i was not a fan but little one took to them. they come in original, sesame and seaweed flavors that little one can eat. other flavors are also available. success! found another dry snack for little one’s school snack time! notes product site: KA•ME rice crackers Continue reading processed gluten free vegan snack: KA•ME rice crackers

thanksgiving meal 2014 deux: family

as for our first family Thanksgiving meal, we sat around the table together, used same plates and served everyone – including k – at the same time. other being than being anxious to eat, as k usually is, i don’t know if she really noticed the difference in how we were eating but it was a nice feeling though nostalgic since it another indicator that she’s becoming a big girl. as usual the end of the meal resulted in an empty plate to our very happy eater despite her food allergies and for that we are always thankful!  menu for Thanksgiving meal … Continue reading thanksgiving meal 2014 deux: family

processed breakfast food: Van’s gluten free flax waffle

bkfst Van's Foods waffles k’s daycare cooking class was going to have waffles so i had to either find or make waffles that k could eat in class. easiest would be to find one that was gluten free vegan and with concerns of k’s allergies, they also had to be made of ingredients that k has already been introduced to.

luckily there was one in our local store that we could try: Van’s gluten free flax waffles. it has no artificial flavors, colors or preservatives. it is sweetened with fruit juices instead of high fructose corn syrup. in addition, it is gluten free, egg free and non GMO Project verified. at k’s daycare, she is the same age as a few other toddlers in the class and the teachers decided since they all started walking, to have them begin potty training. with potty training, they will give them a treat. Nature's Path Organic Whole O's  Cereali have read some give candy but at school they plan to give Cheerios. since Cheerios has wheat and eggs, i needed to find a gluten free vegan alternative.

sandwich: gluten free eggless grilled cheese

Happy Sandwich Day! Named after John Montagu, the fourth earl of Sandwich, who in 1762 spent 24 hours at a gaming table without any other food, the sandwich has become a culinary staple for just about everyone on Earth. *see note 1

k’s daycare wanted to celebrate the day by asking all of the kids bring a sandwich to school. so a few days earlier, i had k try the brown rice loaf i found in the supermarket and luckily she didn’t have any problems with it.

so for k’s sandwich on this fun “holiday”, the easiest sandwich in the book: grilled cheese!

baby feeding schedule: “wet” snacks and the search for “dry” snacks

with k’s allergies i have been preparing all her meals myself. since it has been mostly fruits and vegetables, it has been manageable. at her daycare though they only have 2 meal times. so i had to adjust her meal schedules to accommodate an early lunch and a snack. they originally asked for a dry snack but since they understood her allergy situation, we have been able to just provide some cut up fruit and vegetables. prep: food storage

the results of k’s second food allergy test, shows that her food allergies will continue to be a concern. our allergist had suggested that we would clear our house of things that she’s allergic to in hopes that her reaction to them will lessen and then perhaps she will grow out of the allergy.

food storagei do enjoy prepping k’s food so that part is not a burden. other families with children k’s age have been able to share meals with their toddlers and i was looking forward to making meals that we could all eat together but it seems like making separate meals will be a longer term process to make sure her meals aren’t contaminated with anything she is / could be allergic to. since k was over 1, i wanted to see what the average amount of calories a child her age should eat and i found choosemyplate.gov that shows food types and amount of foods to eat. unfortunately the earliest food group examples and quantity they provide are for ages 2 to 5 but i use it to devise a meal plan: 3 meals and 2 snacks – and – make sure to include all food types in her daily diet: fruit, vegetable, grain, protein and dairy. during month seven of solids, k turned one! a milestone for this is that k starts cow milk! since we had to supplement with formula it was a huge financial cost. now that k can drink cow milk, the cost was a noticeable saving. until babies turn 2, k needs fat for brain development so we started k on organic whole fat milk. on the sixth month of solids, we upped k’s meals to 4 times a day. we also added some new colors in her diet including red with tomatoes, bell pepper and beets; white with turnip and cauliflower; and purple with blueberries. k continues to have a great appetite!

at month five of solids, k continues to enjoy new foods. we’ve been very lucky that despite her allergies, she still has a growing repertoire of foods she can eat. also, k is a great eat so she continues to eat all of the new and old foods we’ve introduced her to.
