daycare cooking assignment – China Study: eggless Yang Zhou fried rice tower

the next country on k’s daycare schedule is China. the teacher asked for my help. years ago i taught elementary grade kids to make dumplings and i thought of simpler steps for k’s class of toddlers to make them but my greatest challenge was k’s wheat allergy. i tried for several weeks to make gluten free dumping wrappers to no avail. they kept falling apart – too fragile for toddler hands.

daycare cooking assignment – Australian study: gluten free vegan english muffins breakfast

next country k’s daycare is “visiting”/exploring is Australia. apparently one of the famous breakfasts are english muffins with bananas on top. so i have to figure out how to get/make gluten free vegan english muffins. when i went hunting for it in various grocery stores, i couldn’t find any so i took online to find a recipe to make it myself. daycare cooking assignment: sugar cookie

for the holidays k’s school is making sugar cookies. so i found this sugar cookie recipe and pared it down for k’s allergies – which made it just 2 main ingredients and a few flavoring ingredients (vanilla and salt). the only cookie cutters we owned were star wars cutters that m got as a gift. so for the trial run, i made  star wars apple “sugar” cookies.

milk sugar cookiem enjoyed the star wars cookies but i didn’t love the first recipe so i looked for another. this one had a few other ingredients, including egg, butter and milk. since k can’t eat eggs, i substituted it flax meal with water. i also used a vegan spread instead of butter. m liked the flavor of this milk “sugar” cookie better than the first.  Continue reading “daycare cooking assignment: sugar cookie”

drink: cows milk allergy

in order to completely rule out cow milk as a cause of k’s eczema, the allergist suggested we give k a vegetable based formula instead of a milk/soy based formula for a few weeks. if k’s skin improves then milk may be a cause. if doesn’t improve at all, then it is not a cause for her eczema.
