daycare cooking assignment: gluten free eggless brown sugar cookies

it’s sugar cookie day again at k’s daycare so why not try another recipe? this is called a chewy butter cookie but it’s very similar to the ingredients of other sugar cookies i’ve tried so i decided to give it a shot. the recipe called for a lot of sugar – both white and brown so i reduced the sugar and only went with brown.

the cookies were the perfect level sweet (yikes – imagine if i put in the original amount!) and not too chewy (which is good for a cookie). i think this will be my go-to sugar cookie recipe from now on!

daycare cooking assignment – China Study: eggless Yang Zhou fried rice tower

the next country on k’s daycare schedule is China. the teacher asked for my help. years ago i taught elementary grade kids to make dumplings and i thought of simpler steps for k’s class of toddlers to make them but my greatest challenge was k’s wheat allergy. i tried for several weeks to make gluten free dumping wrappers to no avail. they kept falling apart – too fragile for toddler hands.

daycare cooking assignment: heart shaped sugar cookies

k’s daycare made sugar cookies for the holidays but i didn’t love the recipe i made so i wanted to try another. while i was grocery shopping the other day, i found a  gluten free baking flour from Bob’s Red Mill. that says you can just substitute it for any wheat flour! that should mean that i don’t have to look for gluten free recipes – so i went online and found this eggless sugar cookie recipe *see note 1.

since this recipe didn’t “allow” for using a cookie cutter to shape, so instead of flattening it with a glass i let the cookies bake for 5 to 10 minutes first. then i removed it from the oven and used a cookie cutter to cut the shape and sprinkle sugar and/or cinnamon. i put it back in the oven for another 5 to 10 minutes. daycare cooking assignment – Australian study: gluten free vegan english muffins breakfast

next country k’s daycare is “visiting”/exploring is Australia. apparently one of the famous breakfasts are english muffins with bananas on top. so i have to figure out how to get/make gluten free vegan english muffins. when i went hunting for it in various grocery stores, i couldn’t find any so i took online to find a recipe to make it myself. daycare cooking assignment: chocolate muffin

daycare cooking assignment: sugar cookie

for the holidays k’s school is making sugar cookies. so i found this sugar cookie recipe and pared it down for k’s allergies – which made it just 2 main ingredients and a few flavoring ingredients (vanilla and salt). the only cookie cutters we owned were star wars cutters that m got as a gift. so for the trial run, i made  star wars apple “sugar” cookies.

milk sugar cookiem enjoyed the star wars cookies but i didn’t love the first recipe so i looked for another. this one had a few other ingredients, including egg, butter and milk. since k can’t eat eggs, i substituted it flax meal with water. i also used a vegan spread instead of butter. m liked the flavor of this milk “sugar” cookie better than the first.  Continue reading “daycare cooking assignment: sugar cookie”

daycare cooking assignment: potato pancake

k’s daycare’s second cooking class / my cooking assignment was potato pancake. the teacher told me there would be eggs in the recipe and when i looked online for potato pancake recipes, i saw quite a variety of recipes, most included eggs, some uses grated potato while others used mashed potatoes, some is flavored with onions and garlic while others are flavored with cheese. daycare cooking assignment: pumpkin bar

first assignment was pumpkin bar. i’ve never had a pumpkin bar before so not only did i have to modify the recipe, i also had to figure out what it should taste like! luckily k is a new eater, so i don’t have to create something to taste like what others know it would be. i just had to find a way to make it look somewhat like what her classmates are having and fit within her taste range that she can experience her cooking class fully.

i knew about this project a week before the daycare cooking class so i had time to research pumpkin bar recipes and find a way to modify it so k can eat it. some factors in the ingredients include eggs (due to her allergy), flour, cinnamon, sugar, baking power and baking soda (which she hasn’t had yet) and sugar (which i wasn’t ready to introduce her to yet since she’s just 1). processed food (gluten free eggless bread): Brown Rice Loaf

k’s daycare wanted to celebrate International Sandwich Day which is on Monday, November 3rd this year. i haven’t introduced k to bread yet since it’s mostly made with wheat flour and egg – both of which are no-no’s in k’s diet.

k’s daycare had been playing “kitchen” for a few weeks. then they informed me that they are starting a cooking class in their weekly schedule. i thought: how fun! but  the new class comes the concern about k’s food allergies. not only do we have to make sure k doesn’t eat the food she knows she’s allergic to, we also have to be more careful about what she hasn’t tried yet because there are plenty of things she hasn’t eaten yet!
