this isn’t really very original after all bread and butter is quite simple but since we hadn’t introduced k to butter yet, i thought it would be a very easy Sunday morning breakfast. just to make it a little more fun, i cut them with a fun shape with my cookie cutters. yum.

k has been enjoying mushrooms so i topped the bread and cheese with it. she ate it all up, as expected!

k’s daycare wanted to celebrate the day by asking all of the kids bring a sandwich to school. so a few days earlier, i had k try the brown rice loaf i found in the supermarket and luckily she didn’t have any problems with it.
so for k’s sandwich on this fun “holiday”, the easiest sandwich in the book: grilled cheese!
k’s daycare wanted to celebrate International Sandwich Day which is on Monday, November 3rd this year. i haven’t introduced k to bread yet since it’s mostly made with wheat flour and egg – both of which are no-no’s in k’s diet.
before i considered looking for a recipe to make bread nor do i own a bread baking machine — although a friend got one for her wedding years ago and i did think they were really cool – i went shopping at my local natural foods store. luckily i was able to find Ener-G Foods’ Brown Rice Loaf. i like that it was free of gluten, wheat, casein, dairy, egg, soy, nut, low/no sodium. in addition it was non GMO Project Verified.
